Cinnamon - Raisin Challah

22 fl. ozs warm water

3.5 Tbsp active dry yeast

6 ozs raw cane sugar or light brown sugar

10 ozs Coconut Oil

1 Tbsp Himalayan Pink Salt

15 ozs whole eggs whipped

8 cups Unbleached AP Flour (King Arthur)

4 cups Whole Wheat Flour (King Arthur)

1.5 Tbsp Cinnamon and 1/2 cup granulated sugar mixed

1.5 cups raisins

Mix water, yeast and sugar. Set aside for 15 minutes.

Add oil, eggs and salt to mix.

Fold in flours and half of cinnamon sugar mix and knead for 10 minutes.

Add raisins and let rise until double in size.

Divide dough in 3 and then divide each loaf in 3 again.

Roll each piece to about 12” and braid 3 together.

Let rise until double in size again, brush with egg wash and sprinkle with remainder of the cinnamon sugar.

Bake at 350 for 15-20 minutes depending on your oven.
